This recipe we both love! It's very easy to make. I used to always think Cheescake was so hard and difficult to make, but it's really not.
Lemon Cheesecake
CRUST
1/3 cup butter
1 1/2 cups wafer crumbs
1/4 cup brown sugar
FILLING
2 8 oz/250g pkg. cream cheese, softened
3 eggs
1 cup granulated sugar
3 tbsp lemon juice
TOPPING
2 cups sour cream
3 tbsp granulated sugar
CRUST: Melt butter in saucepan. Stir in wafer crumbs and sugar. Press into ungreased pan. Bake at 350 F or stick in the freezer for 10 minutes. Cool. I have found that sticking it in the freezer works better, less chance of it accidently burning.
FILLING: Beat cream cheese until smooth and creamy. Beat in eggs, 1 at a time. Add sugar, and lemon juice. Mix well. Turn into crumb lined pan. Bake at 350 F for 45 minutes until firm.
TOPPING: Mix sour cream and sugar. Spread over cheesecake. Return to oven for 10-12 minutes. Chill until needed.

I made this recipe once. It is pretty good, but it tastes more like chocolate cake than brownies. But it's handy if you want to make something chocolatey and have no eggs in the house.
No Egg Brownies
2 cups flour
1 cup water
1 cup brown sugar
1 cup granulated sugar
1 tsp salt
1 tsp vanilla extract
3/4 cup baking cocoa
1/2 cup oil
1/2 tsp baking powder
1/2 cup chopped nuts (optional)
1/2 cup chocolate chips (optional)
1/2 cup dried cranberries (optional)
Boil water and 1/2 cup flour over low heat stirring constantly, until it reaches the consistancy of a thin glue paste. Remove from heat and let cool before proceeding.
Mix sugar, salt, vanilla, cocoa and oil in large bowl. Then add the flour/water mixture. Mix well.
Add the remaining 1 1/2 cups flour, baking powder and any of the optional items.
Spread the mix into a greased 11x7 inch pan. Bake 350 F for 25 minutes or until a knife can be inserted and come out cleanly.

I haven't tried this one yet but it sounds so good don't you think?!
Banana Pudding Squares
- 24 NILLA Vanilla Wafers, crushed
- 3 tbsp non-hydrogenated margarine, melted
- 1 pkg (250g) cream cheese, softened
- 1/2 cup icing sugar
- 3 cups thawed COOL WHIP whipped topping, divided
- 3 medium ripe bananas
- 3 cups skim milk
- 2 pkg (4 serving size each) JELLO Vanilla Instant Pudding
- 1/2 square BAKERS Semi-sweet Chocolate, grated
Mix wafers and margarine. Press firmly onto bottom of 13x9 inch baking pan.
Mix cream cheese and icing sugar with wooden spoon until until well blended. Gently stir in 1 1/2 cups of the whipped topping. Spoon mixture evenly onto crust; spread carefully. Cut bananas in half cross-wise; cut each piece lengthwise in half. Arrange banana pieces over cream cheese mixture.
Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk for 2 minutes. Spoon over bananas. Spread with remaining 1 1/2 cups whipped topping. Sprinkle evenly with chocolate. Refrigerate at least 3 hours before serving.
