Cinnamon Mini Muffins

Cinnamon Mini Muffins

1 1/2 cups all purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground allspice
1 egg, lightly beaten
1/2 cup milk
1/3 cup butter, melted

2 tbsp sugar
1/2 tsp ground cinnamon
1/4 cup butter, melted

In a large bowl, combine flour, sugar, baking powder, salt, nutmeg and allspice.

In a separate bowl, combine the egg, milk and butter. Mix well.

Stir into dry ingredients until just moistened. Spoon onto greased or paper lined muffin cups.

Bake at 400 degrees for 12-14 minutes.

For topping, combine sugar and cinnamon. Brush the tops of warm muffins with butter and sprinkle with sugar-cinnamon mixture

Makes 2 dozen.

Best Ever Banana Muffins

Best Ever Banana Muffins

1 cup all purpose flour
1/2 cup oats
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
3/4 cup sugar
1/3 cup shortening, melted
1 1/2 cups mashed bananas (3-4 bananas)

Combine flour, oats, baking powder, baking soda and salt in mixing bowl. Beat egg, sugar, shortening, banana together thoroughly. Add banana mixture to dry ingredients. Stir until just moistened. Fill greased muffin cups 3/4 full. Bake at 375 degrees for 20-25 minutes or until top springs back when lightly touched.

Makes 12 muffins

Puffed Wheat Cake

Puffed Wheat Cake

1/2 cup butter
1/2 cup corn syrup
1 cup brown sugar
2 tsp vanilla
9 cups puffed wheat

In large pot bring to boil the first 4 ingredients. Boil for 2 minutes. Remove from heat and add cereal stirring until well coated. Pack firmly into 9x13" pan.

Best Brownie

Best Brownie

1 cup butter
1 cup flour
2 cups sugar
1/2 tsp baking powder
2 tsp vanilla
1/4 tsp salt
4 eggs
1 cup chopped nuts
3/4 cup cocoa

Heat oven to 350 F. Grease l3x9 inch baking pan.

Melt butter. In mixing bowl stir in sugar and vanilla with the butter. Beat in eggs. Add cocoa. Beat until well blended. Add flour, baking powder and salt. Beat well, stir in nuts. Pour batter into pan.

Bake 30 minutes or until brownies start to pull away from sides. Frost if desired.

Sugar Cookie Cutouts

Sugar Cookie Cutouts

1 pkg (250g) cream cheese, softened
3/4 cup butter, softened
1 cup granulated sugar
2 tsp vanilla
2 1/4 cups flour
1/2 tsp baking soda
1/4 cup colored sugar or sprinkles

Beat cream cheese, butter, sugar and vanilla in large bowl with electric mixer until well blended. Add flour and baking soda; mix well. Cover and refrigerate 1/2 hour.

Preheat oven to 350. Roll dough to 1/8" thickness on lightly floured surface. Cut into assorted shapes with cookie cutters. Place 2" apart on greased baking sheets. Sprinkle with sprinkles.

Bake 10-12 minutes or until edges begin to brown. Transfer to wire rack.

Slow Cooker BBQ Chicken

1 cut up chicken pieces
2 cups BBQ sauce

Cover chicken in slow cooker with sauce and cook for 6-8 hours.

3 cups graham cereal
1 cup mini pretzels
1 cup salted peanuts
1 cup pecan halves
1 1/3 cups (10oz) white chocolate

Melt chocolate. Mix together.

Eggless, Milk-free Pancakes

Eggless, Milk-free Pancakes

Ingredients
  • 1 cup white flour (can substitute half or all for whole wheat)
  • 3 tablespoons white sugar
  • 2 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons margarine or butter (can be substituted with applesauce)
  • 3/4 cup water
  • 1 egg or 2 tablespoons water
  • 1/2 tsp vanilla
  • 1/2 cup fresh or frozen blueberries (or other fruit), optional
  • pinch cinnamon
  • (If not using margarine or butter, small amount of light oil to grease pan)
Directions
Sift flour, sugar, baking powder, and salt together into medium mixing bowl.
Melt 2 1/2 Tbsp margarine in frying pan until melted. Be sure to tip the pan side to side to coat/grease all over.

Pour melted margarine in a small bowl, add water, vanilla and egg (if you are using), Mix well.

Mix blueberries or other fruit with dry ingredients, just before adding the liquids.
Stir liquid mixture into the dry ingredients until it is thoroughly moistened; It is OK if this batter is lumpy.

Cook the pancakes over medium-high heat on the stove-top (or 375F on electric frying pans). Cook pancakes until the tops are bubbly and the bottoms browned. 

Turn the pancakes over to cook other side (*Approximately four minutes per side).

Serve hot with margarine, honey, brown sugar or maple syrup.

*Actual cooking time will depend on the size of the pan you are using

Carrot Pineapple Muffins

Carrot Pineapple Muffins 

  • 4 cups flour
  • 4 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • 2 cups sugar (don’t decrease)
  • 4 cups grated carrot
  • 1 cup coconut
  • 2 cups grated apple
  • 2 cups raisins (optional)
  • 1 can drained pineapple
  • 6 eggs, beaten
  • 4 tsp vanilla
  • 1 ½ cups canola oil

Sift dry ingredients. Mix wet ingredients in separate bowl and then add together. Do not over mix.


325 degrees 35 minutes

Applesauce


Applesauce


3–4 lbs. of apples, peeled, cored, and diced
1 tsp. of lemon juice
1 tsp. cinnamon
1/4 c. brown sugar
1/4 c. of sugar
1 c. water
1/2 tsp. salt


1. Add ingredients into a large pot. Stir.
2. Bring to a boil.
3. Lower heat and simmer for 30–40 minutes.
4. You’ll know it’s ready when the apples begin to fall apart as you stir. Using a hand masher, break down the chunks until the applesauce is desired consistency.
5. Refrigerate until serving.


Tips:
• I prefer to use multiple types of apples when making applesauce.
• Be sure to cut off any remnants of the tough core when dicing. You’ll thank yourself later.

Banana Cream Cheese Muffins

Banana Cream Cheese Muffins

1 1/2 cups all purpose flour
1 cup natural wheat bran
1/2 cup sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3 cup chopped nuts
1 egg, beaten
1 1/2 cups mashed ripe banana
orange cream cheese mixture

Stir together flour, bran, sugar, baking powder, baking soda and salt  and nuts in a large bowl.

Combine egg, banana and butter in a small bowl. Add all at once to flour mixture; stir until just moistened.

Divide half the batter among 12 greased large muffin cups.

With a small spoon make a shallow well in batter in each cup.

Place 1 tsp of the orange cream cheese mixture in each well. Top with remaining batter and remaining cream cheese mixture.

Bake at 350 for 20-25 minutes. Makes 12 muffins.

Serve with banana orange butter

Orange cream cheese mixture

1 pkg (125g) cream cheese, softened
3 tbsp sugar
1 egg
3/4 tsp grated orange rind

Cream together.

Banana orange butter

1/2 cup butter, softened
1/4 cup mashed banana
1/4 cup orange marmalade

Makes about 1 cup

Lemon Cheesecake Muffins

Lemon Cheesecake Muffins

2 cups all purpose flour
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/3 cup cold butter, cut up

1 large egg
1/2 cup milk
1/2 cup sour cream
2 tbsp lemon juice
1 tbsp grated lemon zest

4 oz (125g) cream cheese, softened
1/4 cup sour cream
4 tsp sugar

Measure first 4 ingredients into a large bowl. Stir. Cut in butter until mixture resembles coarse crumbs. Mix a well in center.

Combine next 5 ingredients in small bowl. Add to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full.

Mash remaining 3 ingredients in small bowl. Spread on batter. Bake at 375 for 20-22 minutes until toothpick inserted comes out clean and tops start to brown. Let stand for 5 minutes before removing from pan.

BBQ Sauce

BBQ Sauce

1 cup ketchup
1 tbsp worcestershire sauce
1 tbsp mustard
1 1/2 tbsp oil
salt and pepper to taste
tabasco sauce (optional)

Simmer for 15 minutes.

3/4 cup bbq sauce, sweet and sour or plum sauce

Mexican Rice

Mexican Rice

1 cup uncooked rice
2 cups chicken broth
1 tbsp butter
1/2 cup salsa
1 tsp garlic salt
1 tsp taco seasoning

Bring all ingredients to a boil. Reduce heat to low and cover. Simmer for 20-25 minutes.

Tropical Fruit Dip

Tropical Fruit Dip

1/2 cup sour cream
1 cup milk
1 small pkg instant french vanilla pudding
1 8 oz can crushed pineapple, undrained
1/3 cup coconut

Blend sour cream, milk and pudding together until smooth. Fold in pineapple and coconut. Refrigerate for a couple hours or overnight. Cut up fresh fruit and serve.

Mud Pies

Mud Pies

2 cups sugar
1/4 cup cocoa
1/4 cup butter
1/2 cup milk
3 cups oatmeal
1/4 cup coconut

Boil sugar, cocoa, butter and milk for a few minutes and remove from heat. Mix in oatmeal and coconut. Mix and drop by teaspoons on wax paper on cookie sheets. Works fast! Put in freezer and when frozen, put in containers.

Makes 2 1/2 - 3 dozen

Soft and Chewy Chocolate Chip Cookies

Soft and Chewy Chocolate Chip Cookies

1 1/4 cups sugar
1 1/4 cups brown sugar, firmly packed
1 1/2 cups butter, softened
2 tsp vanilla
3 eggs
4 1/4 cups all purpose flour
2 tsp baking soda
1/2 tsp salt
1-2 (12oz) pkg semi-sweet chocolate chips

Heat oven to 375 F. Beat sugar, brown sugar, butter until light and fluffy.

Add vanilla and eggs and blend well.

Add flour, baking soda and salt, mix well. Stir in choc chips.

Drop dough by tablespoon 2" apart on ungreased cookie sheets

Bake for 8 minutes

Makes 6 dozen.

Cold Fighting Tea

Cold Fighting Tea

600 ML boiled water
1 cinnamon stick (1/2 tsp)
1 tsp ginger
1 tsp cloves

Steep for 1/2 hour.

Add lemon juice of 1/2 lemon (2 tbsp)

Add honey to taste

Makes 2 servings
