Carrot Pineapple Muffins
- 4 cups flour
- 4 tsp baking soda
- 1 tsp cinnamon
- 1 tsp salt
- 2 cups sugar (don’t decrease)
- 4 cups grated carrot
- 1 cup coconut
- 2 cups grated apple
- 2 cups raisins (optional)
- 1 can drained pineapple
- 6 eggs, beaten
- 4 tsp vanilla
- 1 ½ cups canola oil
Sift
dry ingredients. Mix wet ingredients in separate bowl and then add together. Do
not over mix.
